Instructions
  1. Shred zucchinis.
  2. Put shredded zucchinis in a clean kitchen towel and press out all of the moisture.
  3. Add zucchinis and remaining ingredients in a bowl and combine.
  4. With a ice cream spoon or a regular table spoon, place small zucchini balls on parchment paper.
  5. Grind some extra parmesan over the tots. The more cheese, the crispier the tots.
  6. Place in a pre-heated oven at 180 degrees Celcius.

Baked Hushpuppies – not fried – healthy alternative

Baked hushpuppies are a much healthier alternative to the famous, deep fried southern dish.

Hushpuppies are delicious bite sized cornmeal snacks that are typically deep fried. I skipped the deep frying. To make them perfectly bite size, I used a cakepop silicone mold.  Then I baked my hushpuppies.  This recipe left me with some batter, which I poured into a greased cupcake pan.

Special tip:

I added ground flaxseed to the recipe to add a bit more “feel good feeling” to this snack.  Each one of these balls has about 70 calories and is definitely filling.  I packed these up for a roadtrip with my mom and aunt and it was the perfect snack on the go.

Instructions
  1. Finely chop onions and grind flaxseed.
  2. Add the onion and sunflower oil to a pan and cook at medium high temperature for 3 minutes.
  3. Lightly beat eggs with a fork.
  4. Add egg to milk and mix then add the remainder of the ingredients. Ensure onions have cooled before mixing all ingredients.
  5. Grease cupcake / cakepop pan generously.
  6. Divide batter in cupcake pan or cakepop pan and bake for 25 mins at 180 degrees Celcius.
