  1. Pour oil to large pot and heat up. Then add chopped onions and allow to cook for 3 - 5 minutes until translucent.
  2. Chop onion, jalapeno, garlic, half of red bell pepper and spicy paprika (optional) then add to onion. Also give it 2 tablespoons of chili spice mix.
  3. Chop mushrooms in half, cut carrot in slices than add to pot with 2 cans of chopped tomatoes. Also add 1 cup of water and 2 tablespoons of chili spice mix. Allow to cook until carrot slices are soft.
  4. Puree the ingredients, add beans, remainder of red bell pepper (cut in small squares), corn and 2 cups of water. Allow to cook for two hours until reduced by 1/3 on low temperature.
  5. Serve in bread bowl with avocado and sour cream.
