Healthy Arugula Salad – get your Vitamin A!

Nutrional table for healthy arugula saladEating healthy can be so easy and delicious.  It’s just a matter of combining the right ingredients.  This healthy arugula salad does exactly that.  It blends lots of amazing, fresh flavors – all packed with nutrients.  They come together in this salad in a perfect blend of sweet from the apples, crunch from the walnuts, bitter and tanginess from the Arugula.

This salad recipe doesn’t just fill you up, it fills you with great nutrients like Vitamin A from the Arugula, Vitamin C from the tomatoes, magnesium from the Walnuts and the wonderful list goes on.

Tip for Dressing

For the salad dressing, I use a simple vinaigrette – like my easy 3 ingredient vinaigrette found here.  Anything that combines sour and sweet will be a delicious match for this salad.

Other variations of healthy arugula salad

You can add other ingredients to this salad to spice it up further.  What I love to add is baby spinach.  Baby spinach fills this salad with more rich nutrients and doesn’t modify the taste.  What I do not recommend adding are coarse spinach leaves, as they tend to change the texture of the salad.

Also finely chopped celery can be a great addition.

To make a meal out of this salad, add some chicken breast and you have yourself a wonderful meal.

Instructions
  1. Prepare each of the ingredients: cutting cherry tomatoes in half, crumbling feta cheese and walnuts and preparing the avocado.
  2. Wash and dry the arugula.
  3. Combine all ingredients in a large bowl, add vinaigrette and prepare to serve.
